This video from https://explainingcomputers.com/ Youtube channel shows a simple way to add GPIO to a PC. There are a couple of boads mentioned that plug into the USB and give the PC the ability to access GPIO, I2C, SPI and analog (on one of the boards) pins. He programs it in Python.
Chris even shows how to read air temperature, pressure and humidity then form it into a spreadsheet.
